The Rivesaltes tuilé is a soft tiled wine. It comes in the category of natural sweet wine.

It is produced in Languedoc-Roussillon’s vineyard (South-West of France), where the terroir benefits from a Mediterranean climate with schist and marl soil. The main grape variety for the Rivesaltes tuilé is the Grenache.

OVEN FALAFEL EXPRESS   

It's strange. You can find falafels, the very popular levantine dish, almost everywhere in sandwiches as well but you never ever think about doing yours. Believing that it might be difficult to do I suppose, tricky, with special ingredients? Yes, if you wish to do the correct one, it will take around 1 day (you have to soak the chickpeas first, etc, etc...). Lucky you, it's easy-peasy here. With this recipe, I can demonstrate that it is possible to have yummy falafels in a very quick manner. The only trouble with this dish, it's the time. The time people eat them : too quickly for my taste... This recipe is from my Lebanese friend Thérèse . (I have adapted it of course...).

Very easy and full of vitamins this potage has everything to please you! As the butternut is a pain in the Atmosphere to cut, I always go for the frozen version which is already peeled and diced! The same for the vegetables : I find pouches with a nice mix already cut. In France, we use a lot of frozen vegetables thanks to the Mr Picard shops all over the country. So do not hesitate to use some now!




Wine pairing : Muscadet (White) from the Loire Valley.

RATATOUILLE AND ROQUEFORT CAKE


In my freezer you can find a lot of ratatouille that I made earlier on and freeze afterwards. Ratatouille is handy, good, healthy and you can combine it with absolutely anything or prepare it the way you like : flan, compote (use a hand blender), cake, etc, etc...
To prepare my ratatouille I diced tomatoes, aubergines, pepper, onions, courgettes, thyme and garlic. I cooked all those ingredients with a little bit of olive oil in a large pan. I covered and it will cooked gently for 35 minutes. I add a little bit of brown sugar to caramelized it at the end. And voila. I know that normally you have to cook every single vegetable separately only and never ever combined them when cooking but I had to do an easy and quick way. I made a lot and freeze... If you don't have the time, take a jar or a tin. Roquefort is my daughter weakness so I marry it to a yummy cake with ratatouille....Enjoy!

I do love Soba. Those special brown pasta made with buckwheat. They cook in 4 minutes only which is absolutely perfect. In addition, they taste heavenly. We can easily find edamame beans now (as well as Soba pasta) in large supermarkets. Before, when they were not so popular, I cannot count how many times I had to go to Japan Center in Piccadilly to find those special ingredients...

THYME INFUSION

When I am in the South of France, I always take some fresh thyme spring when I am running in the Garrigues. I keep them, dry them (sometimes not...) and use them to cook nearly everything with...
When it's cold, I prepare a thyme infusion and drank it all day long. It's soothing and comforting. You just longed for a cosy plaid in front of a log fire... Heaven...
