Between you and I, no one can go wrong with a velouté, especially if you are out of ideas! I know quite well that soup served for dinner may appear a little bit simple, a little bit boring especially for Christmas. But well presented, with gorgeous ingredients and a little je ne sais quoi, your velouté will be the winner at your Christmas table... And no worries for the Rocamadour whipped cream (take any kind of strong goat cheese if you cannot find my beloved Rocamadour...), it is so simple to realize you have no idea...

I know, it sounds strange isn't it? But it is one of my creation I am very proud of! Do not ask me why I did it though because I have absolutely no idea... I tend to eat pepper grilled quite a lot though. It has a soft and sweet taste, perfect to accompany nearly anything!

Are you ready to go back to the Isola di Capri for a new pasta adventure? Please find the second dish you will see almost everywhere in good restaurants : the Aumm-aumm. Ironically, it means hidden in Napoli. Made with Provolone cheese from Campanie (an aged hard cheese), it has a distinctive flavor sweetened by the aubergine. As usual when you fry them, always put the aubergine to sweat for 30 minutes before. Believe me, it won't be oily in the pan and it won't stick to the pasta, a gem in cooking! The best I have tasted was at the ristorante Villa Brunella in front of the magnificent Marina Piccoli adorned by a beautiful sunset, a night to remember...

One of my favorite cheese is cooked Reblochon. It brings me so many, many memories of skiing till night, sharing emotions of the day with friends around a hot gluhwine, snow falling down, stroll in the mountains and so on! I am always amazed by the power of food to bring you back somewhere, with someone down memory lane... As you may noticed, no eggs, no crème fraîche in this pie. Between you and I, the Reblochon is a quite heavy cheese and just like this, it feels lighter (yes, yes). With a nice green salad lovely seasoned, you have a balanced supper ready in no time...

This easy chicken recipe is absolutely wonderful no less! Paired with roasted potatoes, you have a yummy and balanced meal sorted out! My children are always very excited when I prepare it. It is a good family dish but it works quite well for an informal lunch with friends... Do not hesitate to make lots of tapenade that you can keep in your fridge... Ready to prepare this fabulous dish once again or simply mix it with hot or cold pasta!
